If your mom doesn’t have a favorite meal, create the perfect mimosa bar with fresh fruit and this Infinitely Adaptable Frittata from Delish ! Ingredients: 8 large eggs 1/3 c. heavy cream 3/4 c. shredded mozzarella Salt and pepper Pinch red pepper flakes 2 tbsp. extra-virgin olive oil 1 shallot, minced 3 cloves garlic, minced 8 oz. baby bella mushrooms, sliced 1/2 c. ricotta 3 c. baby spinach Directions: Preheat the oven to 375°. In a bowl whisk together eggs, heavy cream, and cheese. Season with salt, pepper, and a pinch of red pepper flakes. In a large skillet over medium heat, heat oil. Add shallot and garlic and cook until soft, 5 minutes then add mushrooms and cook until soft, another 5 minutes more. Add spinach and cook until wilted, 2 minutes. Season with salt and pepper. Pour egg mixture into the skillet then dollop with ricotta and transfer skillet to oven. Bake until eggs are just set, 12 minutes. Salmon Creek Trail Salmon Creek Trail is located just 20 minutes away from your home at Acero Haagen Park. The trail features scenic landscapes of forest-like vegetation with a beautiful backdrop of Mount Hood. In case you’re having trouble finding it, the trail begins at the Klineline pond and follows the serene Salmon Creek for approximately 5.9 miles. An important thing to keep in mind when visiting Salmon Creek Park is that because this trail is heavily trafficked, dogs must be kept on a leash at all times. However, this trail can be enjoyed with your furry pal as it is a dog friendly trail. Vancouver Lake Take in the beautiful scenery of Vancouver Lake as you hike along its coast for a moderate 4.3 miles. This time of the year is perfect to visit this trail as the terrain is dry, wild flowers are blooming, trees are lush green, and the sky is clearing up. The trail is dog friendly as well but must be kept on a leash as the path is traveled by families and trail runners. Cougar Creek Trail Cougar Trails Loop is a year round open trail stretching a short 2.8 miles with dense forest vegetation making an easy and quick way to get out of the city and experiencing nature. The trail’s main attraction is a shark tooth shaped stone hanging from a gate reminiscent of a Japanese-styled gates, or Toriis, located under tall green pines. Read on for a few spring cocktail recipes that you can try at home this weekend. Gone with the Gin Sit back and binge-watch Netflix shows while sipping on this soothing Kombucha G&T. Recipe: 2 oz. of gin 3 oz of tonic 2 oz of watermelon kombucha (or whatever your favorite fruity flavor is) Garnish with a lime wheel Stir ingredients together in a glass over ice, and you’re good to go! Spicy Pineapple Margarita Margs aren’t just for #MargaritaMondays and Cinco de Mayo! Spice up your weekend with this spicy spring cocktail. One of the best parts of spring in Vancouver is the reopening of our local farmers' market! Read on to learn about the Vancouver Farmers Market and new information about their COVID-19 safety precautions. Rain or Shine The Vancouver Farmers Market is open every weekend whether it rains or shines! As you know, the PNW is pretty rainy in the spring, but this outdoor market is ready to serve the community no matter the weather. They opened last weekend on March 20th, and will stay open through October 31st. Their hours are Saturday 9 am to 3 pm, and Sunday 10 am to 3 pm.
